A Simple, Balanced Breakfast That Actually Tastes Good

A healthy breakfast doesn't need to be complicated or taste like you're eating something just because it's "good for you."
This is a simple breakfast you can put together quickly using familiar ingredients. You get a good source of protein
from the eggs, egg whites, and cottage cheese; carbohydrates from the toast, raspberries, and honey; and some satisfying fat from the whole eggs and butter.
Best of all, it actually tastes good!
What You'll Need
Eggs & Toast
2 whole eggs
2 servings liquid egg whites
1 slice of your favorite toast
1 tablespoon butter
Salt and pepper to taste
Cottage Cheese & Berries
½ cup low-fat cottage cheese
½ cup raspberries
1 tablespoon honey
A small pinch of coarse salt
How to Make It
1. Make your toast.
Toast one slice of bread to your liking and spread it with 1 tablespoon of butter.
2. Scramble the eggs.
Combine 2 whole eggs with 2 servings of egg whites and scramble them together in a pan. Season to taste.
If you're hesitant about adding egg whites to your eggs, give this a try. When they're scrambled together, there isn't much noticeable texture difference compared with using all whole eggs. It's an easy way to increase the protein in your breakfast without simply adding more whole eggs.
3. Put the eggs on the toast.
Pile the scrambled eggs directly on top of your buttered toast. Simple.
4. Make the cottage cheese bowl.
Add ½ cup of low-fat cottage cheese to a bowl and top it with ½ cup of raspberries and 1 tablespoon of honey.
Finish it with a small pinch of coarse salt. It might sound unusual, but the little pop of salt works surprisingly well against the sweetness of the berries and honey.

One of the things we teach at Raven's Post is that improving your nutrition doesn't have to mean completely reinventing the way you eat.
This meal is a good example.
Instead of trying to create a "perfect" breakfast, we're combining several basic foods to build a meal with protein, carbohydrates, fats, fruit, and plenty of flavor.
The whole eggs provide protein and fat, while adding egg whites increases the protein without dramatically changing the meal. Cottage cheese provides another protein-rich food, raspberries add fruit and fiber, and the toast and honey provide carbohydrates.
It's balanced, filling, easy to make, and doesn't require an elaborate recipe or a cabinet full of specialty ingredients.
And that's often what sustainable nutrition looks like: ordinary foods combined a little more intentionally.
